Brownie is yet another unusual boss from Super Meat Boy. His level basically plays as a race between Meat Boy and himself to reach the end of the level.Brownie is basically a living mass of Dr. Fetus's own waste and was created to destroy Meat Boy. I wanted to make him look angry like he does when he first sees Meat Boy but the empty cavity for the mouth would have made the sculpt back heavy. Instead I gave him the surprised/fearful look seen in the cut-scene when he realizes he has to race Meat Boy.

I don't know why Meat Boy tried to help him when he's made of poop. I wouldn't dare touch him... D:

That's simple, Meat Boy's the hero and as such has a good heart. Brownie was created to defeat Meat Boy or die trying. Both characters knew that the moment Dr. Fetus pressed that button and as the hero Meat Boy didn't want to see the villain hurt anyone else.
As for the whole being disgusting to touch thing, remember that the star of the game is a constantly bleeding yet still living cube of mystery meat and the damsel in distress is made entirely of used bandages. It's a theme the game has.

I'm pretty sure it's meant to be blood. Team Meat has said a few times in interviews that Meat Boy is intended to be a boy without skin. In the flash game Meat Boy actually had a skeleton which would suggest that the "meat" is actually the boy's muscles and that the red trail he leaves everywhere he goes is actually the blood pouring from his body which is just a huge open wound.
Given the fact that the rest of the characters are rather odd themselves, I think after awhile Team Meat decided that it was easier to just run with the idea of Meat Boy being seen as meat rather than a boy with no skin.
