Question, do you seal the copper with anything after you have finished to prevent metal poisoning into the skin.

No reason to, as copper is completely safe for your skin, so there isn't any "poison" involved.
It's a common misconception that the "green" you can get from copper is harmful. It's just copper oxide from a simple reaction with sweat or body oil, and can be washed off without any problem. Heavy "green" oxidization is more common for people with strongly acidic skin oils.
"Sealing" copper is only possible with coating that will eventually peel, chip, scratch or flake off, or waxes that can stain clothing and I refuse to set my customers up for that sort of mess and disappointment.
If you have problems with your skin causing excessive oxidization of copper jewelry, I can make most of my copper designs in Sterling Silver.
Some cheap costume jewelry that is silver or rhodium plated nickle or base metal blends can cause a similar reaction when skin oils break down the more soluble base metals, but that often causes a rash, itching or irritation. It's pretty easy to tell the difference, and unless someone has a copper allergy, copper oxidization isn't harmful at all.
All of the copper and silver I use is pure and free of nickel, lead, cadmium or other weird additives.
