If I started taking pictures of birds in motion would Photo Shop help you get rid of the blur on the wings? Or would I have to just accept that its going to be blurry?

Photoshop can't help with that or rather I should say that one could draw in the motionless wings but that's way too much work. If you want to stop the motion you need a camera with high ISO capabilities and a high shutter speed. Even with an ISO setting of 1600 and shutter speed of 2000 humming bird wings are a blur except at the ends of their travel.
Also the blur of a bird's wings in flight can be seen as a good thing inasmuch as it shows the motion.

I swear that my camera has a point just before and just after spot on focus. I also believe focus is an illusion. Nice shot.

Iβve agonized over focus with my Canon 1D MK III since I got the thing. One of my first images with that camera was [link] which was very nicely focused but the vast majority of the pictures that I took were not so well focused. At first I assumed that the fault was mine until I learned that Canon had recalled these cameras. After three visits to the Canon repair facility the camera is far more consistent in itβs focusing ability. The simple fact is that humming birds are much faster than I or the AF on my camera.
I have found that getting to know the birds and being able to anticipate their movements is key to getting the kind of shots that I want.

I use manual focus now. For the finishing touches I use unsharp mask in Photoshop in the lightness mode of LAB color. For spot sharpening I use Photokit sharpener. Every time I try auto focus I get disappointing results. I study my birds and let them get used to me near their feeder. They never like the flash and the really shy ones leave when the mirror goes up. Now I use a heavy jacket over the camera to suppress the mirror noise.
Some sharpness is lost in the A/D conversion, Canon is superior to Nikon in this, but it can all be corrected in PS.
