First, I just want to say that your comment comes across to me as more insulting and critical rather than genuine curiosity.
I certainly can't and won't speak for "most people," but why I chose to design my Earth elementals that way, is because, elementals (in my opinion) are magical constructs/manifestations of an element. I chose to represent that with plant-life, because I think that makes a great deal of sense as an accurate piece of imagery and connection to the element. I have seen some Earth elementals that are more golem-like or made of stone or mud. However, for me it was easier to be more creative using the variety that plant-life has to offer. Also, because plants, as real living things grow and the elemental of Earth is often associated with growth, due to plants, trees, flowers, and many other things that fall under the umbrella of that element. Since all my elementals are divided into 4 teirs, I also had to make sure they were all connected. That is the image that fit how I imagined my elementals to be, both for my world, and in regards to the way they were created and how they are summoned.
I hope this sheds some light on your question. So I must ask you, how would YOU design an Earth Elemental?

I see where you are coming from. I guess I feel, and you should note, that while this is a picture of earth elementals, they aren't actually Earth elementals per se, does that make sense? One is a root elemental, one thorn, one ivy, and the last arbor, all seperate pieces that fall under the umbrella of "Earth."
I think that is neat you have a 10 elemental system. I can certainly see you having both seperate elementals, but since wood, is so often associate with earth, and an earthen material if you will, in my view, its an "earth" elemental, just a wood type. And there isn't anything wrong with that. Does that make sense? I apologize if I couldn't explain it well.
