I love the UBW anime and the fact that Archer gets a much bigger role then he did in the original. Plus Saber still plays an important part even though her roles with Rin is reversed, she is now a good friend to Shirou rather then a love interest which was what Rin was in the original.

There is no way they wouldn't.
It's just bad that Saber couldn't live as normal Human, but hey at least in the end they are both happy.
