That part was animated by James Baxter! I found the animation style reminded me, too, of a disney movie. He's really outdone himself and his touch gave that scene even more magic.

I just am more confused about what Steven is and what happened to Pink. She's gone, but why? Is it a reformation? Shattered? White Diamond is me: What do you mean she's GONE?

Well... I'm going to guess when Rose said she was going to become half of Steven it was somewhat literal? She gave up her existence, form, and gem for him. It's not her gem anymore it's entirely Steven's. It might still retain aspects and traces of her, like her powers, abilities, and memories but it's "code" was reprogrammed from Pink/Rose into Steven.
As for what Steven is? He's literally 50% human and 50% gem. When White removed his gem it split him into those halves respectively.
