The same sculpting tools I use for my green stuff/brown stuff work. Not the clay shapers, but the blades from my craft tool kit. [link]

I strongly recommend this kit if you are going into sculpture and model construction. It is excellent value for money.

Then I'd look around for a smaller set. You won't need most of the tools in the kit for pumpkins.
