I think the one with a smoother surface can be the most appropriate for realism - on this kind of paper you can blend the medium smoothly and add smaller details. But since I like that a little bit of texture is seen on the papaer, I'm usually choosing the one with small grains, it's called 'eggshell'.
For the pencils - use a bigger vairety of them. 2B is my favourite, while HB goes for lighter areas and 6B-9B for darker ones, you can also add some coal for extra dark areas.

Being so full of gray, you would think this was a pencil on white paper piece. Being white pencil on black paper makes it even more interesting.

Brilliant! I looked over your other W on B drawings, your technique has really progressed. Even though this is a close up you have captured a sense of a 3-dimensional object - especially between the beak and the eye. Looking forward to your next W on B portrait [maybe a person?].

Oh wow, this is stunning! Absolutely beautiful, I love the changes you made to the reference and I'm simply blown away by all the detail. Those feathers must have taken ages! You captured this bird beautifully, especially his gaze and all the different textures. Great work!
