Wow, I haven't done a detailed background since last August! Probably because it takes so long. I did also spend a whole lot of time procrastinating...The city is called Porto Patanem and it's on a barrier island. At one end is a natural harbour and at the other is a very gross mudflat. The griffins buy things elsewhere and sell them in the city, because they know their way across the desert better than anyone else.
