Description
Sophia's birthday cake. This was her idea, to have the turtles having their own birthday party on the top of her cake. She and her big sister Valerie helped me make the decorations for the cake. It was a lot of fun. Sophia painted the cake board herself, and Valerie helped with the white chocolate shell. They both helped with the fish, especially the starfish.

The cake itself was a cheesecake pound cake with a chocolate cream cheese swirl and a mild lemon buttercream, and the other tier was a mint chocolate chip flavor with mint buttercream and chocolate pudding as a filling.

With all the cakes I've made, this was the first that had to be refrigerated with fondant on it. I was a little bit worried about it because of the humid climate where I live, but it held up beautifully...now I know I can refrigerate a fondant-covered cake with no worrries.
