Is there a classification difference between the "normal origami" (like a boat or a crane), which takes only simple folds, and the "OMG origami" (like this one) which takes several twists, bending, almost 'sculpting'?

Boats and cranes tend to be considered 'traditional origami.' Aside from that, the term origami encompasses both.

They aren't so much distinct techniques as they both employ and use similar or identical folding maneuvers albeit one in more complex and intricate ways.
Think of it like drawing some well known design, a peace sign for example, and then comparing it with a highly detailed graphite portrait. While both are done from the same medium, one is significantly more complex and intricate than the other. This is of course not to say that one is necessarily more beautiful than the other; that is more dependent on the skill of the artist.
