I'm glad you like Applebloom's hair. I couldn't get the canon rounder hair bang things to look right, so I went with sharper style instead.
Celestian flour is the best flour ever! It's probably limited supply. The flour's is probably taken from the best fields in Equestira, each grain painstakingly picked over by the scientist ponies in Canterlot to be perfect for baking the cakes she loves and demands.

Your right, it's actually a birthday cake for Bloomberg, who only likes the finest dirt cakes.
Why does it have apples on it you may ask?
After being cared for by the Apple family for so long Bloomberg thinks it's a pony and has learned to like eating apples. Which makes Bloomberg an apple-tree that thinks it's an Apple and likes eating apples.
...
And I have no idea were I'm going with this strand of thought, I'm going to bed.

It's too late, the cat is out of the bag: you have revealed the truth about Bloomberg's dreadful cannibalistic tendencies. Why Applejack was so protective toward it now makes sense: she didn't want to incur the wrath of this might apple-eating apple tree, since after all, she is an Apple herself (seewhatIdidthere?).
And now, a yearly sacrifice of dirt cake must be made to keep Bloomberg satisfied, lest he let loose its mighty hunger upon the heedless trees of Aaaaaappleloosa (dammit Braeburn!).
