They are crochted. There are a lot of sites on the internet or books to buy on making amigurumis (crocheted animals/dolls).

I really really adore these two, the manga and the mangaka
The one with the white hair is Koji Nanjo.
If you're interested, there are various soundtracks for this series. And I love the one who lends his voice to Koji
