those tubes on the eva's back and shoulders are called restrictors and when they are disengaged, the eva has the risk of losing it's humanity(it has a human soul in it) in exchange for tons and tons of power

actually the Secret Mode: "The Beast" is present in all EVA Units, but only Unit 02's was activated, when Makinami gave the over-ride code and reset it to Beast-Mode.
