They are called "Root Cellars" These are where the farmers stored their vegetables that they grew over the winter months.
And yes, they are built into hillsides and once you enter the doors, you must go down steps for about another 8 ft.
This was to keep them cool, and in a dark area for the winter so that they kept longer.
Typically, there would be a series of bins that were about 4ft x 4ft x 4ft high filled with Potatoes, carrots and turnip.
Many people around here still use Root Cellars but the above ground portion is more modernized. We actually store organic vegetables in a root cellar.
