Because....
YOU DO NOT USE WHITE FOR HIGHLIGHTS!
*ahem* using black and white limits things a lot.
It's also easier to change the atmosphere of theΒ
pic using certain colors. If you limited yourself to
black and white, you'd never be able to make a pic
inside say, a base with red lighting.

Nope, ever heard of reflected light?
This is especially noticeable on metal objects.
It will greatly effect how the shading looks.
And light sorces come in more then one color.
