I was searching for the perfect cake for my mom’s big birthday and when I ran into something french call Le Fraisier, I knew this is the one I want to recreate. A strawberry cake made with two simple layers of genoise sponge, mousseline cream and not too sweet italian meringue. It has a fruity, fresh taste, a silky texture. Your fraisier looks (and surely tastes) great!
You can add mixed pistachio to the mousseline cream, this is fairly common in France and it adds a little thing to this recipe
