Aim for the gasbag! It is the largest target and almost guaranteed to down the ship after a few cannon shots (provided that those guns shoot projectiles about the size of a baseball).

Not necessarily! it depends very much on the gas and the pressure it's under. Also, the balloon could be compartmentalised to prevent one hole draining the entire balloon. On top of that- it's all fantasy physics
