Considering how long Anneekke travelled with Aris as his follower around Skyrim I think it's pretty amazing he only got around to vamping her now.

Because he won't be able to "convert" them like he has with seemingly every mortal he's met. Which means he'll have to actually fight, and that appears to be something he prefers to avoid.

OK, please keep in mind most of what I know of this character is from the comics I've read by Spaceskeleton and SlayerSyrena (and I've recently reread comics done by both of them to help Β me get my thoughts together).
Aris strikes me as someone who, when interacting with mortals (as opposed to dragons, draugr, etc) prefers to use manipulation to get what he wants. I imagine he can be a real smooth talker when he wants to be. When dealing with the Vigilants, his mother-in-law, Gerdur, Margot the Dragonborn, and Legate Rikke (among others), using his head and his silver tongue (before using his fangs) seems to be his preferred method. He also seems to be very prideful in that (many vampires are). He's good at it, and he knows it.
Other times, such as with Edward Sparkles, he seems to let his vampire princesses do the work while he enjoys watching. But he doesn't seem to keep most of his converts long.
And yet ... he didn't resist arrest when Mjoll called the guards when he stole a sweetroll.
I'm thinking he's become overconfident about himself and his abilities. I bet he's "been there, done that" everywhere in Skyrim. But there is always someone better. Given Aris's reputation, I imagine another vampire lord may seek him out eventually. I have no idea if Aris would win or not (let alone how much of the world would be left when the fight was over), but I suspect such a fight could make him adjust his sense of pride.
