Mega Mantine has an insanely large wingspan, allowing it to glide far further and faster than before. Its sturdier scales allow for better defensive capabilities, especially in the Special department; it's fully capable of surviving even the strongest of Electric type attacks.

Possible Pokédex Entries
Entry 1: The large fins of Mantine offer shelter to small fish Pokémon such as Remoraid, Finneon, Goldeen, and Wishiwashi. It is believe in the old days that Mega Mantine was a symbol of an ancient tribe due to their rings on their back.
Entry 2: This Pokémon is often pursued by gangs of Sharpedo, so its large fins allow it to be able to make a quick getaway. Any fish Pokémon in vision field of Mega Mantine is instantly considered in need of shelter and it sticks it under its fins.

Wouldn't an ability like Adaptability or Aerilate would be better than Water Absorb?

First of all, though it makes sense, Mantine is a flying type with little reason; so i don't think it suddenly having a Flying ability like that doesn't fit with its..."gene capabilities", get what i'm saying?
Also, Adacptability seems...too drastic, and the fact that Mantine simply has another type that was added of little reason i don't think it makes much sense.
Third of all, some ability are not the best, and we need more creativity instead of slapping abilities to make it 100% more overpowered.
