Don't want to be an asshole, but I'll be one anyway. Since Jon was created of the union Rhaegar Targaryen and Lyanna Stark, two people who weren't married to each other (Rhaegar being married to Elia Martell of Dorne) Jon's Surname will still be Snow, since he afterall still a bastard, royal blood or not.
