Keep in mind that white, is would be the highlight color. So for example, make the hair a little more blue-ish / grey-ish, and shade with blue/grey
Have this one as example: images2.fanpop.com/image/photo…
You could paste this into your canvas and pick the colors from the drawing, just too see which colors this artist is using. As you can see, the hair looks white! But it is build up from a little darker colors then white, since white should be your highlight!

A good base always helps i think but to me shading is quite difficult.. it costs me more effort than the sketches

I have to say the hair in the linked image looks better than the one arrived at in the tutorial, the use of white highlights and the fact that the highlight on the head doesn't follow the curve of the head unfortunately detract from the quality of the work.

I totally agree with you! I know, the hair in the picture is way better. I was suprised I did it that well : P
But soon I will upload another one, but then black hair ^^ I will do that one better. I also wasn't pleased with the way the hair falls. It could be better. Thanks for your comment!
