Throughout Dark Souls 3, there's been one NPC who I always enjoyed meeting, talking to and even fighting along side with. Siegward of Catirina is a hilarious man, always cracking jokes and making Estus Soup or Estus Beer/Rum/Ale. And if he isn't snoring like a monster after a good toast, or getting trapped in the most ridiculous situations, he's at your side, fighting giant fire demons or a lord of Cinder, and he does a fine job of it too. And what's nice is he's one of the few NPC's who can actually be saved, if you kill Yohrm before springing him out of jail.

Siegward of Catirina, you are the best Onion Bro that's ever been. Cheers mate.
