So how exactly does the domestic breeding work? Since the domestic seagons mimic their surroundings, would you have to raise them in a room themed what you would want them to look like?

yes basically! surrounding them in similar items will also help, too, such as the types of toys you give them to play with, accessories you give them, etc.
