A bit of a role reversal in this story as old as time. Very interesting~<3
Also got me to thinking: its a really stupid idea for a knight to fight a dragon in full armor. Not only is it mostly historically inaccurate for how people fought throughout most of history, but armor is designed to defend from swords, arrows and maces. You know, both sharp-edged and blunt weapons. But unless the dragon's claws or tail are the reason to wear the armor, then wearing armor to defend from fire is a rather self-defeating action. Its a fire-breathing dragon, for goodness sake! Fire won't save you from fire, just give you a nice metal shell to roast alive in and give the dragon a prewrapped, iron protected meat meal.
Instead, wear something lighter. You won't be burdened by as much weight, you can move faster, and maybe not die (as foolishly). If you feel not as protected or safe as you would in armor, think of it as this way: you're up against a dragon, the embodiment of all evil in this (not in this case, obviously), which can kill with one fire blast with or without said armor. Do you really think you'll ever be safe enough?

I Will answer this as an engineer:
A dragon is not only dangerous because of its fire, but also his claws, fangs, and tail. These items requires a strong protection because they are all a one-hit-kill condition.
About the the fire, using a simple metal armor would definitely burn the knight alive inside its own protection, since metal is an excellent heat conductor and has an extremely low capacity to store thermical energy. However, without an armor the fire would kill the knight in the same way, because it is very hot and the knight is covered in fur, which would ignite instantly in contact with the fire (If the knight is human, and not a pony it would have clothes).
So, without armor a knight would die to anything a dragon strikes with, but using an armor he can at least protect himself against physical attacks.
Ok, so we decided for using an armor. What now?
The armor is heavy and would slow down the knight, it also works as a thermal conductor that could cook its user alive. However, there are ways to solve these problems.
The armor could be forged or built with composite materials which could include an external platted ceramic shell, that works as a shield against fire as ceramic is a terrible heat conductor. By using separe ceramic parts instead of an all-together cover, we prevent the external shell to break as a whole, since it is a fragile material that would break with any of the dragon's attacks.
Another solution would be to soak youself in water before the fight or take a bath in a mud puddle.
Now I will answer your question and a Canterlot's magical armorsmith:
The armor is made of metal to protect from physical attacks, but it is also covered with a heat absorbing magical painting.
I hope you read it all to the end.

Magic is the answer to everything.
But the best nonmagical protection against fire: asbestos underwear

Hm. I did read it to the end. And it does sound like a persuasive argument. The dragon in this picture managed to break through part of the knight's armor with only physical force, but some armor might be made to protect against fire if only slightly. Even if there's no visible magical painting to be seen on the knight's armor. The knight is sweating, not dripping from water or mud, but that's a general detail. Also, considering how only the dragon's head and neck are seen, its impossible to tell which parts of the dragon could be deadly and which parts aren't, but let's assume its tail, claws, and teeth are dangerous. Even if its head is around the same size as the knights and likely can't fit too many sharp teeth or enough biting force to pierce armor or even chain mail.

The Princess told him he must stop the dragon from burning their crops. Strangely enough, she was not specific on how he should accomplish this.
