I am sure there is plenty of other great art out there.
If you would have told me half a year ago I would be drawing ponies I would probably laugh and call you crazy. A show for little girls? However, just like you I found fan art of it everywhere, and I thought to myself that if there are so many (often adult male) fans of this show, maybe it would be worth giving it a try?
It was.
I think you would be surprised by the great quality of animation, and the stories are very well written. Unlike most child cartoons it's enjoyable for all ages, and as you have seen, it have an enormous fan base. Here is a link to the first episode. I mean, what do you have to lose? [link]

I find uploads on this site nowadays are kinda filled up with pointless sketches of colorful horses in different poses made in high-advanced software in few minutes outta boredom. That seems like indeed there's nothing else for people to draw these days.
I did watch that show out of curiosity & I find it's one of those trendy shows that go in to oblivion once a new show is trendy. People jump on new stuff today like flies on heap of dung.

I agree that there is plenty of low quality work featuring ponies. However, I might be wrong, but I don't think the rate of crappy art to good art is not any worse than any other part of deviantART. There ARE plenty of good pony art out there too.
This here was indeed thrown together in a few minutes with high-advanced software. (The sole purpose was to serve as a reference for the wings.)
Maybe you are right and it is just a trendy thing that will fade. (That's what they said about the internet.) And a part of why people swarm to it is probably indeed that it is trendy. But it wouldn't have became trendy if it wasn't good in the first place.
And honestly, is it really a that bad thing to jump to new trendy stuff?

You see, what I don't get with the wings is that when they are closed, you can clearly see the four Primary feathers, and they're covered by three small curves that look like the Coverts. But judging by how the wings open, that would mean that the Coverts are on the wrong side when closed. Because when the wings are open, the Coverts are on the inside and are therefore on the underside of the wing, meaning they would be hidden from view when the wings are closed. Moreover, the three small curves effectively disappear when the wings unfurl, and the top side of the wing (which can be seen when the wings are all the way down in the flapping animation) only has the Primaries defined.
Either I'm missing something with the bone structure and how wings actually work, or FiM Pegasus wings are not physically possible in favour of aesthetics. It's driving me nuts trying to understand them, because even if I draw a non-animated picture, I like to imagine the motion a character is going through in that particular moment when I'm drawing it. But my brain cannot fathom how Pegasus wings work exactly, so I'm never sure of the motion.

I don't really know. I think the coverts are on both sides, but not marked on the top when the wings are out. It wouldn't surprise me if the show have simplified the anatomy to make it look better and easier to animate. Discord said it best: "What fun is there in making sense?"

I know, it just makes things confusing. Because prior to FiM, I never drew anything. And the show inspired me to draw, which in turn drove me to look up all kinds of references from pony proportions to real-life wing anatomy, so I'm going by 'textbook' knowledge that I haven't even practiced. So simplified, or otherwise inconsistent details really throw me through a loop because my perfectionist mind wants it to be realistic like in the references, but I also want it to be faithful to the show until I can find a style or method I'm comfortable with.

I wasn't much of an artists either until I became a brony. Staying as true as possible to the show until one understands it good enough sounds like a good plan.
