Because they're both demure.
And because when they died someone carried them bridal style , effectively playing straight the Pietá Plaigiarism trope.
... Not to mention the death of Zack Fair is rather reminiscent with Zero's .

The similarity between her and Aerith is striking, especially in their personality and role in the story. I wish they hadn't been used solely for the purpose of adding dramatic weight to the hero's journey, though. They deserved so much better.
But I like to think she's waiting for Zero to come join her soon.

She looks like Aerith with that hairdo. It's very nice.
Interestingly, Iris and Aerith's names are pronounced very similarly in Japanese. Aerith is pronounced "Aerisu", and a botched translation of that is why Aerith's name is spelled "Aeris" in Final Fantasy VII. Iris is pronounced "Irisu".

Eeexxaccccttllyyyyy. That's actually when I first noticed that they had this similarity between them. The Japanese pronunciations of their names are so similar.
