Hm! I'd imagine it would have medicinal and magical properties, similar to regular mandrakes. Herbalists would grow it for these uses, and because it's less dangerous to harvest (even if they have to go through the extra effort of making sure it bonds and grows properly with its host plant.) Kindly herbalists only harvest the leaves as they sprout, allowing the mandrake to rest and recuperate between harvests. They even befriend the creatures and know how to keep them happiest. More profit-minded or callous herbalists will use the whole mandrake.
