I had to force myself to stop fiddling with contrast and light. I'd appreciate hearing any advice on capturing sunsets

First off, this sunset is absolutely stunning... especially the way it is reflected in the water. It seems, on one hand, that the bridge is a tad contrasty- but at the same time, I really like the overall effect. I especially like how you can see little pieces of the sky through the windows of the building.

Very lovely! Nice job capturing the reflection and the great tones that a sunset gives! I think it could be a little lighter in the silhouette areas. It's just a little bit overwhelming with so much dark, especially in the left side. Maybe adding a little more light and detail so it's not quite a silhouette would help, or possibly framing it different so not so much silhouette is shown in the image. I like Mishkin-Rayman's idea of trying to do a high dynamic range picture. I think it'd give it a lot of "pow".
