i haven't the faintest idea!
in orthodox christianity, yesterday is the so-called "pure monday", the beginning of the great lent of fourty days - so, traditionally, everyone eats only seafood today (not fish, however) along with the vegetables of their choice. it is considered the end of the roman carnival, with all its extremes and lasciviousness, and the beginning of a time of purity, of bodily and mental exercise which culminates on the holy week. supposedly people do not eat any meat, white or red, until holy sunday, but times have changed a lot since the byzantine epoch.
how kites fit into all this, i really don't understand...

it doesn't look like it makes sense at all, to be honest!
from what i just read, mpdern paper kites made it to greece as late as 1860,
so they must be irrelevant to the religious ceremonies, which are much older.
apparently the kite is a simple and cheap child's toy - and schools have
always been closed on "pure monday", so... that might explain it a bit.
