I'm in the same boat, I added an Eevee thinking about what I could evolve it into then he became a Sylveon before I could do anything! And he's good in battle so I guess I'll use him for a while lol this is super cute great job!

I originally planned to have a team full of gen 7 Pokémon too, but then I got an Eevee! ;A;
Probably if wasn't for Sylveon, I would have taken a Pyukumuku or Type: Null...

Mine was fun, I abandoned a few mons I really wanted to use so that I didn't have a single overlapping type; Decidueye, Lycanroc, Salazzle, Kommo-o, Golisopod and Type: Null

In my team I have Decidueye, Lycanroc, Salazzle, Sylveon, Mimikyu and Ninetales.
This time I decided to pick only the Pokémons that I like most and now I have too many fairy and ghost types! XD

Yeah, I really wanted Mimikyu and Palossand but obviously that would make for way too many ghost times, lol.
But I think my next shiny hunt will be for Palossand so it's all good ^_^

yeah, soft resetting is the worst, I usually try to avoid it unless it is for natures/IVs

Leafeon with Leaf Blade is also pretty strong. For those resistant to Grass-type moves, raise the Leafeon's attack with Swords Dance.

Yeah, is true! Leafeon has also a very good defense! But to be honest every Eevelutions can be really strong!
