I used a Italian meringue, you can find it everywhere, I dont use exacly the recipe, I put less than the amount of water or sugar from the recipe tells me. You have to experiment with a recipe until you have the perfect one for you.Everything is done testing. But remember when you get it, note the percentage of the materials you used
