Funny you bring this up. I read a bit that suggested that the reason Twi'leks resemble humans is because, as humans are the dominant species in the galaxy (vastly outnumbering all others because they were the first in the recent era to colonize large parts of it), other species like the Twi'lek and Falleen evolved to adapt better into human society, thus their "coincidental" human features are actually a response to human encroachment.

It was revealed in Star Wars: Clone Wars (animated) that the Galaxy was seeded with life by a race, life that was meant to resemble them, but evolved with differences on different planets. It was a way to explain why all the aliens looked alike in the movies.
