Well each transformer that the matrix is passed onto becomes a Prime and their body transforms.

Ok.. so looks like the upper body splits, and the shoulders move forward and come together. The legs shift and come up to meet what was the robot torso with the middle toe coming down from the knee guard (brilliant idea by the way). But I'm not totally sure what happens to the robot arms, and where the dino tail and head come from...

head is inside the body and deploy with a "stick-like" attachment, and you can see the tail on the back of grimlock.It simply deploy down.
The arms rise up to the head (the head flip at the same time with t-rex head) and join together. Yellow parts of the arms form the neck of t-rex.
For the rest, you're right!!!
