I've been going through a bit of a bacon phase myself. I've been making omelettes most evenings as it's quick and simple and have been frying potatoes, onions and bacon before pouring the egg on top. I find the bacon fat adds an extra level of flavour to the other ingredients, especially the potato

Oh I agree. I'm aiming to have it in my fridge more often moving forward.
I do find frying it can be a bit messy at times, so I've taken to chopping it into small pieces and adding that to the meal (usually an omelette or scrambled eggs).
