You can't because the sand can only be flipped after it's full of energy from the sun...otherwise it defies gravity

it most likely would keep flowing the same way if flipped. the sand would go up into the bottom at that case.

If they did say that at near the beginning of the game I wouldn't rememeber. It served as a good idea at the time for Link to throw it at her sense it was the only thing in his hand.
