I don't know Star Trek well enough to know whether they use different spellings in canon than we do in the here and now. Or if the ships are named for things different from what I would expect.
On the USS Forestal; forestal is a solvent used in lab work and James Forrestal was a US Secretary of the Navy then Secretary of Defense, and the aircraft carrier CV-59 was named for him.
On the USS Independance, I used to live in Independence, Missouri, and that's the only spelling I've ever seen of independence even when it was used in text not related to the city name.
On the USS Vally Forge, all references I've ever seen to the locality where George Washington and the US revolutionaries had their famous encampment have been given as Valley Forge. Also, the ship in Silent Running was Valley Forge.
