Cool! I haven't seen a lot o magical girls stuff but I do know of Sailor Moon mostly but also Puella Magi Madoka Magica, Pretty Cure, Cardcaptor Sakura, and many others.

I'm mostly just doing artwork now
I like coming up with ideas but I kinda have trouble with merging them into a proper story

Okay. I can see that you have some neat OCs to draw from and an art style which looks cool too.
I would say that one way to do writing is to write down some details about your characters and setting. Try to write down some info about them and think about what scenarios the characters could get in but know your world also which helps. Also, do research by looking up a particular topic based on a portion of a character or place which may help to figure out how to write for them and it works with drawing them as well.

I find writing quite intimidating but maybe just getting a notebook where I could write about characters/ideas is a good place to start
I just don't have a habit of writing down things, so maybe that's what holding me down

I'll confess, I wasn't into writing stuff down back then because I was more used to drawing them. Writing does help with figuring things out when you don't have the time to draw at the moment. It helps to get ideas down and think about them for a while before putting them on a sheet or blank space to draw them in. I'm sure you'll find a way to get into writing as much as drawing. Based on how you've been developing characters of your own and coming up with ideas for fanart, you're off to a great start and your art really shows the passion you have for using your imagination and creativity.
