yes, they can move from host to host!
very rarely they'll leave the host alive, but most of the time their current host will either,
A.
be broken down into goo to be absorbed into their body as a source of food(they'll only do this if they know there'll be a new host nearby).
or
B.
they'll fill the host with thousands of their eggs, (those little black spots that are seen on it's underside) wait for them to hatch, and then break the host down into goo for them to feed on. the newborns will eventually disperse on their own before the mimic moves on to a new host.

i shudder to think at a host's lasts moments if they can still think and feel.
yo can they use other animals too O_O

I guess being controlled (and depending on for how long) up to the point of being absorbed, thinking/feeling would depend on the individual host's willpower.
the babies are only big enough to go after mice as their first source of food. They'll work their way up to cats/dogs and eventually humans and other large monsters.
