Poor Undy, but this chapter explains a lot about his relationship with the Phantomhive family.
A lot of people assumed he had some love/lust yaoi fascination with Ciel, but from this chapter I can see that him and Vincent were just really that close (I'm assuming best friends??). My thought is Undertaker is always trying to protect/save Ciel from Sebastian, to somehow break the contract.
