Heh, kinda copying and pasting my answer here for anybody who might have asked this question. *ahem* Anywho...
Well, although they changed the story in later games, in the very first Super Mario Bros., the reason everything has eyes is because they were Toads that Bowser transformed using black magic. Supposedly, the spell would be broken by Princess Peach once she was rescued. This is also the reason that question blocks (and certain brick blocks) have coins and items. They're Toads trying to help Mario on his quest.
Like I said, the story was changed later, which is why those elements are still around, so if we're going by anything after that first game, then there really is no reason for everything to have eyes.

As for the sun from Super Mario Bros. 3 that you're referring to... that's not actually a real sun, but rather a subspecies of the Star, which aren't the same as real stars, but rather creatures from the Mushroom Kingdom that resemble stars.
