Very informative, I think I will get the hang of it.....but what to do for moving subjects, like hockey players whizzing by, on a poorly lit ice rink, 20s exposure will be too long and if I put the ISO too high on SPEED, it becomes all spotty with weird colors, see [link]

That's called noise. Setting your ISO high ruins the quality of the picture, so it's better to avoid it if possible.

A tutorial I found useful!
I'm known to harp on people for posting things where they don't belong and thinking that a simple picture is a tutorial but this, THIS was helpful!
I've been desperate to get some good night time photography done but I've always been slightly confounded as to how others do it so well!
So thank you so much for this tutorial!
