I just had to show you the inside of these cookies with the little cinnamon puddles and the sour, creamy bits of Granny Smith apple... Such a perfect balance of flavours! I think these are my favourite cookies EVER!

I loved them, too. I think of all the cookies I baked, these were the best... which is saying something since I'm a chocolate girl through and through... <3
