If I remember right, it was said that their pauldrons look that way to shield then from stuff from above, like orbital bombardment.

But maybe my brain is tricking me there again.

 Rather, in order that the enemy could not get to the head, and other things that are at shoulder level, well, the suit itself is designed for combat operations in very extreme conditions, not to mention the consequences of bombing and other things.

I just wanted to add a pic of a RT era termie to add it to my comment and this pic was maybe the second result on Google image search. First I thought "Aha! Found the pose reference!". But after looking at it a little closer, I recognized so many differences that I was pretty sure you constructed this from scratch. 

I guess this 3/4 profile is just a very common way to pose characters. I used it myself quite often.
