Sauron was a shape-shifter, able to put on a fair form when he wished, until he was engulfed in the destruction of Numenor in the Second Age--his body was so damaged that he could never take on a fair form again.Β

Sauron (originally Mairon) is a primordial spirit being called a Maiar. As Maiar belongs with the race called the Ainur. He's in essence the equivalent of a demi-god or angel. Under the tutelage of Aule (sort of the Valar of craftsmen and forging) he crafted many of the items around Arda. As a spirit being, he has no real physical form, he can manifest himself as any being he chooses....He's been a werewolf, a vampire, a serpent among other things. He took a beautiful appearance at the end of the First Age in an effort to charm EΓΆnwΓ«, near the beginning of the Second Age when appearing as Annatar to the Elves, and again near the end of the Second Age when corrupting the men of NΓΊmenor.

The Ainur were the first creations of Eru the Illuvatar (God of their universe) as such they are the only immortal race outside the elves, they existed long before creation of the world.

In the movies, Sauron appeares only as demonic fire eye, we dont see how he looked (ok, we see him wearing armor and helmet, but his face is not shown).
