When you think about it, it's ironic. The fans like the supernatural aspect of a series that started off "debunking" supernatural threats.

How I might imagine this whole scenario:
Scooby and the gang were just walking down the street talking about something (it could be plans for what to do or where to go to next for solving a mystery) until a familiar face just so happens to be walking down the same street as they were.
Shaggy: Winnie?
Winnie: Coach? (Runs up to Shaggy and hugs his arm) It has been so long.
Velma: Not to be rude, but who is that?
Daphne: I donβt know but whoever she is, she seems to like Shaggy.
Everyone except for Velma and Shaggy laugh.
Shaggy: So Winne, how are things?
Winnie: Great! I am so happy I could howl.
Velma: Again not to be rude, but who is she?
Shaggy: Well Velma, it is a long story...
And then Shaggy goes into the full details of his teaching career at the finishing school for ghouls.
