I don't know. In the cartoon (anime, if you like) Persian is more house cat-sized than mountain lion-sized. And yes, the gem is the most likely reason.

purple? I always view Espeon as being pinky but they do seem a lot like each other (and I think Espeon is cat like...due to how it acted in Pokepark 1)
