That's the same Moon I chose to play as. First thing I did was remove the hat (I've looked through all of them and she just looks better without a hat)

I didn't realise the character comes from Kanto until I started the game, but even then, the player's mother matches that third skin-tone. I'd feel a bit odd using any other.
I was sort of miffed by the customisation in SuMo, really. There's not as much variety as I'd hoped, so it can be hard to put together outfits.
But I am glad they let you take your hat off! Although once I realised it was a flower, it kinda grew on me... Er, no pun intended.

In Sun, I chose to play as the blonde boy. Back before the trainers' real designs were revealed, I saw someone's fanart designs and they made me want to play as a blonde character for some reason. When I bought Moon, I wanted to play as the girl since I already chose the boy in Sun and I think this skin tone looks the best on her.
I'm also not a big fan of the customization in Sun and Moon. The girl gets more to choose from, but other than her shirt, I just stick with the default clothing. I haven't even changed the boy's outfit other than removing his hat and then putting it back on, although I did change their contacts so the boy could have blue eyes and the girl's eyes are yellow

Haha! It just kinda happened, so I kept it.
I did quite a bit to my intrepid avatar (I might draw her at some point, actually). Overall I'm quite pleased with how she looks, but on X/Y I had quite a few outfits I'd swap between, while on SuMo I just sorta change the colour of tank-top and trousers she wears. Ah well!

Yeah, I had a few different looks in Y as well. Short hair, different contacts, even cat whiskers at one point. I wish some of the outfits from XY would have carried over into SuMo. Kind of weird when a game "where it all comes together" excludes things like that.

I wish the dark-skinned girls were more common...in anime and...Pokemon they're rare it seems. Why is this one drawn as both skin tones? I haven't looked at much fanart, but I'm sure Serena had customizable skin tone Β but she was always drawn as white...

Serena was always drawn as white because her anime counterpart was white. Before the game released, some people drew dark skinned Serenas, but they weren't that common.
Moon doesn't have an anime counterpart, so people draw her in every skin tone

Yes, the girl's name is Moon and the boy is named Sun.
Alternatively, Game Freak has used the name "Selene", but they mostly refer to her as Moon.Β
