would it have been better if the matches were rufus VS. robert richards a.k.a bob as they are "american blonde chubby martial artists & ganryu VS. edmond honda as they are "japanese chubby sumos"?

When deciding a roster, there is always those "Wasted Spaces" which is the reason you try to find place for some more "Unique-moveset" characters. Instead of a roster filled with 10 Ken's. 5 boxers, 9 wrestlers and one sword fighter, but rather try something new, to not waste space, and to make something somewhat work out.
Ofcourse, if this was a bigger roster with all the characters from both franchises, then I would indeed see that as the best possible outcome.
