The easiest way (that I know of) to make a curve is to:
1. click a starting point
2. click the ending point of the curve, and while holding the click, drag to adjust the curvature.
3. right-click anywhere, as long as the pen tool is selected.
4. select "stroke path." you can select pressure (or whatever the checkbox says, I forgot) for a more stylized look. Sometimes I go over the line a few times to make the line stand out more.
5. press return to finish curve.
6. for swirls/ really curvy stuff, you can click and curve multiple times w/out clicking return/selecting paths in between.
There are a ton of other functions in the pen tool that probably make this whole process 10x easier, but I don't know much about it. XP I would look up some tutorials for all the various buttons at the top bar. Experiment to find shortcuts.
